How to Make a Delicious Mediterranean Meal at Home
Are you craving some delicious Mediterranean flavours?
Look no further than this homemade plate of hummus, chicken shawarma, eggplant dip, chopped salad with sumac, and roasted cauliflower. These dishes are all healthy, easy to make, and packed with flavour.
Here's what you'll need for each dish:
Hummus:
1 can of chickpeas, drained and rinsed
1/4 cup tahini
1 garlic clove, minced
2 tablespoons lemon juice
2 tablespoons olive oil
Combine all ingredients in a food processor and blend until smooth.
Taste and adjust seasoning as needed.
Chicken Shawarma:
1 pound chicken thighs
2 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon paprika
1/4 cup olive oil
Mix garlic, cumin, paprika, and olive oil together.
Coat chicken with the mixture and let marinate for at least 30 minutes.
Preheat oven to 375°F and bake chicken for 20-25 minutes, or until fully cooked.
Eggplant Dip:
1 large eggplant, roasted and mashed
2 garlic cloves, minced
1/4 cup tahini
2 tablespoons lemon juice
2 tablespoons olive oil
Roast the eggplant in the oven at 375°F for 40-45 minutes, or until tender.
Peel the eggplant and mash it with a fork.
Mix in garlic, tahini, lemon juice, and olive oil until well combined.
Chopped Salad:
1 large cucumber, diced
2 large tomatoes, diced
1 small red onion, diced
1/4 cup fresh parsley, chopped
2 tablespoons lemon juice
1 teaspoon sumac
Combine all ingredients in a bowl and toss well.
Taste and adjust seasoning as needed.
Roasted Cauliflower:
1 head of cauliflower, cut into florets
2 tablespoons olive oil
1 teaspoon garlic powder
Preheat oven to 425°F.
Toss cauliflower with olive oil and garlic powder.
Roast for 20-25 minutes, or until tender and browned.
